Crunchy Country-Fried Pork Nuggets
RECIPE SUGGESTION FOR USE WITH THE SPICE! MASTER BLEND
INGREDIENTS
Canola Oil, For Frying1 1/2 cups Buttermilk
1 tbsp Chopped Chives1 Egg White
1/4 cup Minced Pickled Jalapenos1 1/2 cups All-Purpose Flour
1 Minced Shallot1 cup Cornstarch
1 tbsp Minced Garlic3 tbsp THE SPICE!
2 tbsp White Vinegar
1 1/2 cups Whole-Grain Mustard
2 lbs Pork Loin, Cut into Chunks
DIRECTIONS:
Preheat a deep-fryer or heavy-bottomed pot, with enough canola oil to come halfway up the sides of the pot to 375 degrees F. Season the pork with1 tbsp THE SPICE.
In a medium-sized bowl, whisk the buttermilk and egg together, and marinate pork in it. In a large bowl, combine the flour, cornstarch, and 2 tbsp THE SPICE.
Dredge the pork in the seasoned flour insuring all of the pork is coated evenly. Shake off excess flour. Working in batches, deep fry the nuggets until cooked through and crisp about 3-4 minutes.
Remove the pork from the fryer to a paper towel lined platter to drain. Transfer the pork to a serving platter and serve with jalapeno mustard.
Mix chives, jalapenos, shallots, garlic, white vinegar and mustard and season with salt and pepper for the dipping sauce.
